India Pale Ales were originally brewed strong to withstand the long voyage to India. Today, breweries concoct IPAs hoppy enough to make the trip back. Vortex IPA is Fort George’s contribution to the IPA arms race.  We designed Vortex IPA not to rip the taste buds off of your tongue, but rather vigorously stimulate your palate with lupulin ecstasy.

Mighty, bold, and black as night, our house stout has gained a reputation for being contagious among the locals. This is no dry Irish anything, rather a strapping American Double Stout with a sweet undertow and addictive hint of roasty goodness. The name honors this brewer’s affinity with literary arachnids – specifically Charlotte A. Cavatica, the eight-legged character from E.B. Whites’ Charlotte’s Web. Be forewarned, this beer will stain your clothes.

A Hazy Winter IPA Utilizing brewing knowledge pulled from the four corners of the planet, Magnetic Fields delivers a new IPA recipe to the Pacific Northwest every winter. Winter 2021-22 features a heavy amount of Amarillo, Cashmere, Chinook, Talus dry hopping. IPA tastes may be polarizing, but Magnetic Fields brings North, South, East, and West together with the irresistible force of lupulin ecstasy.

In 2014 we released an entirely different IPA, a session with a similar name. Collaborating once again with Seattle’s Suicide Squeeze Records, Fort George has remastered the recipe in a big, big way. Artfully mixed like a 7” vinyl, Suicide Squeeze pops with Mosaic, Amarillo, and Citra hops. The can artwork is by Seattle based artist Jesse LeDoux, who won a Grammy for an album cover design for The Shins “Chutes to Narrow.” Suicide Squeeze cans are color-changing – the snake is green when cold, fading to gold as it warms while the red snake accents and building logo fade to gold as well. 1811 was originally brewed in 2011 as the Official Bicentennial Beer of Astoria, Oregon. It was the first beer ever canned at Fort George. 
 
More flavorful than most modern day domestic Lagers, 1811 is lovingly concocted from pilsner malts & flaked corn. Corn was a popular ingredient in pre-Prohibition days. Breweries during those times also had limited access to ice, so they improvised by brewing with lager yeasts at higher-than-normal temperatures. Described as a “Refreshing drink, much consumed by the laboring classes,” this is the inspiration behind 1811 Lager.

HAZY IPA CONDITIONED ON CHARDONNAY POMACE This beer is a tribute to fall in the Pacific Northwest. Three events converge making it a truly fruitful time of year: wine harvest, hop harvest, and the fall salmon run. Fort George teamed up with Spawn Fly Fish and Landmass Wines to make a beer honoring this confluence. Freshly pelletized Strata & Cashmere hops from Roy Farms and potent cryo Mosaic hops from Coleman AG laid a ripe fruity base for the Chardonnay pomace, supplied by Landmass Wines. This IPA is intense with fruit aromas and flavors like peach, cantaloupe, white grape, kiwi, pineapple, and mango, giving it a full body and smooth, sweet finish. PROXIMITY EFFECT
 
Astoria is a special place. The people are 
as giving as the trees. A handful of our 
lovely friends picked all of the local apples 
they could find and together we crushed, 
grinded, and pressed this hodgepodge of 
apple varieties in the Fort George 
courtyard. After fermentation and 
conditioning with a mixed culture of wild 
yeast and lactic acid bacteria, we were 
rewarded with a beautiful rustic cider 
with aromas and flavors of apple rind, 
pineapple, earthy hay, wet stones, and 
kiwi. This cider is a great representation of 
our fantastic community spirit.

CHROMATIC
 
The goal of this cider project was a dry, 
characterful, and fruity cider with a little 
acidity & funk. To accomplish this, we 
utilized a varietal of crab apples called 
Wickson, which has enough sweet sugars 
and flavor but with a proper balance of 
acidity. Kiyokawa Orchards in Hood River, 
OR provided the juice. The cider 
fermented in French oak wine barrels 
from Willamette Valley, using our house 
mixed culture yeast. The result is an 
intricately fruity cider smelling of ripe 
apple juice, dried apricots, sweet peach 
candy, custard, earthy wet hay, light 
baking spice, clementine orange, and lime 
zest. Chromatic is bone dry yet full of 
lingering fruity flavor and a refreshing 
acidity that lends to a crisp finish.

MIXED CULTURE SAISON
 
This one is all about the fruit & funk. It all started with a simple blend of pilsner and wheat malt fermented with a mixed culture of belgian saison yeast, wild yeast, and lactic acid bacteria. After 14 months in the puncheons it turned into a lovely, light sour beer with an earthy funk and hints of peppercorn. It was dry hopped with Nelsons from New Zealand, layering in lots of fruit flavors. Look for tons of nectarine, orange, kumquat, lime, pineapple, along with a bit of salty sea air and belgian yeast character. Finishes super dry and pleasantly tart. Fermented in French oak Pinot Noir puncheons and aged for 14 months before dry-hopping and bottle conditioning.
