Funky Funky Eyepatch
This one is all about the fruit & funk. It all started with a simple blend of pilsner and wheat malt fermented with a mixed culture of belgian saison yeast, wild yeast, and lactic acid bacteria. After 14 months in the puncheons it turned into a lovely, light sour beer with an earthy funk and hints of peppercorn. It was dry hopped with Nelsons from New Zealand, layering in lots of fruit flavors. Look for tons of nectarine, orange, kumquat, lime, pineapple, along with a bit of salty sea air and belgian yeast character. Finishes super dry and pleasantly tart. Fermented in French oak Pinot Noir puncheons and aged for 14 months before dry-hopping and bottle conditioning.

Hops: Perle, Hull Melon, Nelson
